This Spanish mixed-milk cheese is produced using 60% sheep’s milk and 40% cow’s milk, then naturally smoked over oak wood (“leña de encina”), no artificial flavours . It develops a rich flavour, gentle smokiness and firm texture. Matured with a natural rind. Perfect for gourmet boards, pizzas and pairing with red wines.
